The modern conventional method of pathogenic microorganism control implies extermination of infectious agents. In practice, the method involves application of some chemical substances such as disinfectants or antibiotics. Among the adverse effects of this method are even more strong antibiotic-resistant strains, increasing medication toxicity and decrease in human and animal immunity. The possible solution to this vicious circleis general sanitation of ecosystem, animals and humans, increase of their immune status through development of complex medication containing beneficial symbioticmicroorganism consortium that is antagonist to pathogenicmicroflora.
The result of studies under taken is development of stable consortium of beneficial symbiotic microorganisms taken from natural habitat. This consortium became a base for a row of probiotic supplements named «Bogatyr» forfood, feed and biocoenotic purposes.

Results of a research of composition of biologically active substances (BAS) of turnip – Brassica Rapa L., component composition of essential oil of a root crop and its antioxidant activity. are presented. The possibility of enrichment of meat products BAS of turnip is proved. Рrescription of the meat-vegetable products received by replacement of 20 % and 30 % of mincemeat by the studied root crop are developed and their organoleptic evaluation is carried out.

In article possibility of use of a residue of berries of cowberry and a cranberry is studied for production of the homogenized pastes and marinades with a residue of berries of cowberry and a cranberry of the increased microbiological firmness. On the basis of the carried-out preliminary search studies limits of concentration of prescription components of the compositions which are a part of a compounding are defined. For each ratio of components in composition the limit tension of shift and acidity were investigated. The obtained experimental data are processed by means of the software package of STATISTICA 6.0. Linear multidimensional models of interrelations of the components which are a part of the developed compositions with a structural and mechanical indicator (limit tension of shift) and acidity are constructed. Physical and chemical and microbiological indicators of the developed homogenized vegetable pastes and marinades are investigated.

Derives the exact formulas for the calculation of deflection of statically determinate truss with reinforced bars depending on its size, load and number of panels. Method of cutting nodes, implemented in the program in the language of computer mathematics Maple is used. To generalize the solution for an arbitrary number of panels involved induction method. The main object of our work is the development of safe food for school-children. Jelly cannot be used in school meals. We used the Cetraria islandica for making sweet dishes and jelly. These desserts have good microbiological characteristics. Broth Cetraria islandica reduces the growth bacteria Escherichia coli and Staphylococcus aureus thus makes sweet dishes safety in healthiness point of view.
